Oh boy, it's so darn hot. I visited my mom in Florida, FLORIDA last week and it was not this hot. I usually try to conserve energy and deal with the summer heat like a European, but the AC has been on pretty much non-stop at our house for the past few days. I even baked some cookies last week cause I was like, how much hotter could it possibly get?

Otherwise I haven't been cooking much. Living in New York means no yard and that means no grill (unless you're gonna stick one on your fire escape; I'm not nearly skilled enough to cook a sausage while hanging out of my window), but it also means I've gotten creative when it comes to minimal cooking on days that it's too hot to think.

In our house, kimchi almost always comes to the rescue. Steam some rice (in a rice cooker that contains all of the heat in its dainty little walls) and serve cold kimchi on the side. Crisp and crunchy and spicy and summery and even better when followed by lots of ice cream! It's so simple that it almost shouldn't count as dinner, but UGH! Let me live. It's so darn hot.
