Just got home from a 75-minute yoga class that was made up of, like, fifty percent head stands (which I can't do, but I really tried). Now I'm eating cold pizza and Cherry Garcia. Because what is a human woman but a bundle of paradoxes waiting to be untangled?

Danny's out of town for the weekend, so... not only am I eating pizza and Cherry Garcia, but I'm eating them in my bed, with my dogs, while lying on Danny's fancy, incredible pillow which I lahooove. This pillow is MAGIC and its mine for four nights. It makes the missing Danny a little bit easier.

Speaking of the junk food that I eat after I exercise, I made this adorable little grapefruit bundt cake this weekend. I've been begging my family for bundt pans as a birthday or Christmas gift, but I hadn't got one yet because obviously bundt pans are the most boring gift to give (kind of why I didn't buy one for myself). My mom, though, who is an incredible person, mailed me a bundt cake pan stuffed with jelly beans and other goodies for Easter! Now i'm positive that all Easter baskets should be replaced with cake pans.

The cake is based off the Hollywood Grapefruit Cake that you can get at the Brown Derby in Disney World. You can read a little bit of fun history about the cake here. Be careful adding in other flavors to this cake because the grapefruit flavor is delicate and slight. Follow my recipe, though, and you'll be just fine. ;) Hope you like!

Grapefruit Cake

  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 1 1/2 tsp baking powder
  • 2 tsp corn starch
  • 3 eggs, divided
  • 1/4 cup vegetable oil
  • 1/4 cup water
  • 1 grapefruit
  • For the Glaze & Topping

  • 1/2 cup full fat sour cream
  • 1 cup powdered sugar
  • pinch sea salt

Cooking Directions

  1. Preheat oven to 350 degrees and lightly coat a bundt pan with cooking spray.
  2. Combine dry ingredients (flour, sugar, baking powder, corn starch) in a bowl and whisk together well. Create a well in the center and add in egg yolks, oil, and water.
  3. Juice one grapefruit and add all but one Tablespoon of the juice to the flour mixture. Reserve squeezed grapefruit for later. Beat to combine.
  4. Beat egg whites to firm peaks (not dry!). Add egg whites to batter and fold in, never beating or mixing in order to maintain the air you've whipped into those eggs!
  5. Pour batter into bundt pan and bake for about 30 minutes. Remove from oven and let cool fully, turning cake out onto a cooling rack when nearly done cooling.
  6. Beat together sour cream, remaining grapefruit juice, and, while beating, add in powdered sugar slowly so that it doesn't fly everywhere. Glaze will be thin. Color with a drop of pink food coloring if you'd like!
  7. Pour glaze on cake and sprinkle with sea salt and pulp pieces from reserved grapefruit. Slice and enjoy!
