Quiche Lorraine

I love a good quiche. I also will probably love a bad quiche. It's a dish that feels fancy, but is really so, so simple and versatile as pasta, I'd argue. So I put together a list of some of my quiche thoughts alongside gorgeous pictures taken by one of my talented sisters with a fancy camera (yeah, I have more than one...). Thanks, Can! 1. Quiche can and should be referred to as egg pie when in a goofy mood.

2. There's no reason that quiche should have a reputation for being a hoity-toity ladies-who-lunch dish. Quiche is so hearty! Eggs, cream, tons of butter and (if you're smart) bacon knows no gender. Down with heteronormitivity!

3. Get comfortable making a pate brisee. It will open up a whole new world of quiches that are actually quite quick and simple to make. If you've got a crust ready to go, pretty much any veggies, cheeses and meats can be tossed into an egg pie that will fill you up or impress guests. The equivalent of your "oh, this old thing?" dress.

4. Since they can be served hot or cold, quiches are the perfect dish for a potluck brunch or a make-ahead boxed lunch. I also love whipping one up during holiday family get-togethers. Everyone's so concerned with the dinnertime ham that lunch gets totally neglected. Et voila! In you march with quiche in hand, saving the day.

In fact, this particular photo shoot happened at Thanksgiving this year in Buffalo, NY. It was a perfect way to pass the time while babies (and mommies) napped the late morning away.

5. Quiche > Frittata > Spanish Tortilla. Pie crust makes everything better.

6. While I can respect a quiche with cheddar, mozzarella or goat cheese, the real stuff has got to have some Gruyere. That funky, salty Swiss cheese just pulls a good, authentic quiche together.

Thinking about trying out a quiche recipe in the new year? I say start with Julia Child's classic Quiche Lorraine. Though, if you don't have a spring-form pan or tart ring, I love the look of a rustic quiche in a cast iron skillet!
