I made this cake with Candice this weekend. It's dairy-free and uses buckwheat flour which I hear is a good substitute for those with gluten allergies/sensitivity. So, this is a dairy-free, gluten-free cake. We did this because dairy makes Candice very gassy. However, she was still very gassy after the experience, so I'm not sure if I helped at all. (Lol, that's half a joke, sorry Can.)

I don't otherwise have much other news to share, so I thought I'd put together a list of fun things that I've been enjoying (besides Lemonade. I finally watched it. The hype is REAL!).

  • "The Betch's Guide to Trendy Fermented Drinks" in Lucky Peach. Very funny food writer Marian Bull breaks down why you should(? shouldn't?) be drinking trendy fermented drinks like kombucha or kefir. I'll admit, I drink lots of kombucha--it's my I-kind-of-want-wine-but-this-is-OK-too fancy after-dinner beverage. That said, this whey commentary cracked me up:  "Tastes like you tipped an unstirred, half-eaten tub of yogurt into your mouth and then swallowed the liquid, and also paid extra for it."

  • Fancy Catskills AirBNB rentals. Rivaled only by the AirBNB scenes in Copenhagen and Stockholm, where the comforts of beautiful Scandinavian home decor are available for a small fee, Catskills AirBNB rentals are insane. Hipsters from Brooklyn buy homes on farms and renovate them to look like this or this or this or this. I need 1,000,000 weeks of vacation this summer.

  • "How to Be Amazing" by Michael Ian Black. I listen to, easily, hundreds of podcasts a month. That's cause I'm a weirdo who needs to be distracted by human voices at all times or else I start contemplating my mortality and it gets real dark real quick. So I'm always listening to shows and trying out new ones (what are your faves?! please please let me know I always need new ones!) This one is a faaantastic interview show. I really like it. Especially the David Sedaris episodes

  • Beyoncรฉ's tour merch. OK, I just needed to talk about Beyoncรฉ a little.

Anyway, enjoy this cake! It basically tastes like under-baked brownies, the greatest food of all time. OF ALL TIME. Plus, the buckwheat flour gives it a little extra texture which is really fun. Do not be freaked out by the thickness of the batter. Trust me. It should be super thick and it will turn out perfectly.

Dairy-Free Swedish Chocolate Cake (Kladdkaka)

  • 1 cup coconut oil
  • 1 2/3 cup sugar
  • 2 cups buckwheat flour
  • 1 cup cocoa powder
  • 4 tsp baking powder
  • 3/4 tsp salt
  • 1 tsp espresso powder
  • 4 eggs
  • 1 1/2 tsp vanilla extract

Cooking Directions

  1. Preheat oven to 350 degrees. Spray a 9-inch springform pan or nonstick cake pan with cooking spray.
  2. In a large bowl, whisk together oil and sugar. Add in flour and stir into oil and sugar in thirds. Add in all remaining ingredients and beat until combined. Batter will be quite thick, but that's OK!
  3. Fill pan with batter. Bake cake for about 20 minutes, or until toothpick inserted near edge of cake comes out clean (center will be gooey -- it should be! -- so don't test center).
  4. Let cool for about ten minutes and serve warm, ideally!
